Salted Egg Fried Rice with Thai King Brown

- 1 cup cooked Thai King Brown rice
- 3 Salted eggs
- 2 tbsp Cooking oil
- 8 Prawns (diced)
- 50g Shimeji Mushrooms
- 1/3 cup Broccoli (chopped)
- 1/4 cup Corn Kernels
- 1/2 tsp Salt
- Spring onions (chopped)
- Boil the eggs into hard boiled salted eggs. Remove the shell and separate the yolks from the whites in 2 separate bowls. Mash the yolks and set aside. Mash the whites and set aside.
- Heat 2 tbsp cooking oil, add the mashed yolks and stir-fry until it starts to foam.
- Add diced prawns and salt, stir-fry for 1-2 mins. Add chopped broccoli and mushrooms. Cook for another 1-2 mins.
- Pour in Thai King Brown rice and corn kernels. Mix until evenly coated with the sauce. Garnish with spring onions.
